Tim Minchin would be the obvious one to mention here.
Slayer have a fair bit of skeptical stuff as well. Mostly aimed at religion, but they go after conspiracy theorists as well.
And, of course, Stevie Wonder - Superstition.
R.Bear mentioned Muse in the other thread.
They have a number of good song titles for Skeptics: "Thoughts of a Dying Atheist"; "Supermassive Black Hole"; etc. I've seen them cover "Telstar" live.
But are they a good skeptic role model? They've also recorded "Knights of Cydonia" with a dodgy Cowboys meet Cylons on Mars video and lead singer Matt has been accused of being a "9/11 conspiracy theorist" (I've no idea if it is true).
It's much easier to come up with a list of songs full of woo. "No Doubt about It" by Hot Chocolate; "Laurie (Strange Things Happen)" a classic phantom hitch-hiker story. There are hundreds.
I did hear the latest Muse album is a bit full of conspiracy. Although I do like it, and I never listen to lyrics anyway. I've never gone and checked whether the claims have any validity.

I'd like to have gone seen them again on this tour but I'd have to go to the shithole that is the Glasgow SECC and I can't really be bothered these days with the hassle.
Did see them at T in The Park a few years ago and also at SECC about a year later. Were awesome both times.
I already have tickets to see them in Manchester next September. Cant wait.

Anyone interested in a band with a genuine Skeptical outlook could do no better than Bad Religion. A US punk band, been going 30 years. Tight, intelligent and lively....if you like that sort of thing (and I do!).
